At Bernice’s we bake a variety of bread, fresh, every day. We have built our reputation by producing simple, but beautiful sandwich breads that have been in lunch bags and on family tables for over thirty years: Our Wonderful Bread, Honey Whole Wheat, and Sourdough loaves are made without preservatives, low in sugar and full of flavor. Our farm burger buns, sourdough blinkies, honey whole wheat and farm dinner rolls and parker house rolls have graced Holiday dinner tables and summer BBQ’s adding just the right accent to the seasonal cuisine we get to enjoy in Western Montana.

In addition to our commercially yeasted product, we have a wonderful line of Old World Breads. Bernice’s Old World Breads are built from carefully cultivated levains that capture the wild yeasts that occur naturally in the air, on the flour, and all around us. Our Old World Breads are unlike any other bread in the world. In their heart, these breads begin with the clean mountain air we breathe, and the yeast that ride its currents. Each day our bakers mix flour and water to feed these creatures, who in turn raise the dough. In this way we are able to continue the cycle by which bread has been made for thousands of years. Crusty, chewy, hearty breads, like our Multigrain and Rosemary Olive Oil Breads, are perfect with soups, topped with cheese or quite simply torn into with just a touch of butter.

More recently, we have developed and introduced new line of Artisan Sourdough Breads that have been met with enthusiastic support at the Clark Fork River Market. The Artisan Sourdough Family are slightly smaller breads, made from our own cultivated sourdough starters. These breads are intended to be consumed as quickly as possible, fresh from our bakery to your discerning palette. We begin with a ripe sourdough and then cut and knead in wholesome local flavors to shape a new bread identity. For instance, our 1845 bread is made with fresh roasted garlic, red potatoes, fresh basil, oregano and lemon juice. Our Blue Note Sourdough is swirled with Walnuts a portion of dough that we stain with Blueberry Juice. Imagine a Marble Rye, but with blue in place of the Pumpernickle. It’s a fabulous choice for sandwiches or as an accompaniment to a plate of cheese and a nice bottle of wine. Our talented and restless bread bakers have a few more new flavors up their sleeves that we’ll be seeing soon, so stay tuned for new breads coming in the weeks and months to come.
